Island Pepper Company's roots in organic hot sauce can be traced to a backyard garden on the south end of beautiful Bainbridge Island, WA. With a few Serrano and jalapeño pepper plants in the summer of roughly 2014, we made enough hot sauce for a few bottles, and accidentally dumped some down the sink. The all-day sun favored our heat-loving hot pepper plants, but the short growing season of the Pacific Northwest didn't produce a significant yield of peppers. Over the past decade and a relocation to the north end of Bainbridge Island (with arguably a less sunny micro-climate), we've evolved our experimental organic growing techniques to include underground heating for the pepper plant roots and enclosures to temper the night chill and north winds off of Puget Sound. The result has been increased production and a wider variety of fruit and selection of organic hot sauces. We’ve also introduced different fermentation and smoking techniques and infused other flavors like garlic, onions, and citrus. We attempt to bring the most flavorful peppers in a variety of hot sauces, from sweet to tangy and mild to extra hot. None of these should burn your face off; we prefer hot sauces that let their presence be known but keep you coming back for more.

All our hot peppers are grown organically on a small family farm on Bainbridge Island (a garden, really) and are masterfully blended, fermented or smoked, bottled, and packaged right on the property with other organic ingredients. No chemicals and no preservatives other than Himalayan salt and organic vinegars. Each year the hot sauces will differ based on the pepper yield and a types of plants and seeds available. In the 2023 vintage, you’ll notice a heavy emphasis on habañeros since we had (at least) three varieties produce really well. We also strive to incorporate unique peppers with distinctive flavors, such as Bulgarian Carrot and Fish, to complement our standards like habañero, jalapeño, Thai chile, and Serrano.
